Patina de piris

Cook pears, remove the seed and mash them. Mix with pepper, caraway, honey, PASSVM, LIQVAMEN and some oil. Add some eggs and bake, sprinkle with pepper and serve. (Apicius)

Preparation: 10 min.
Cooking time: 40 min.

For 4 Pers. you need:
1 kg pears
3 eggs
2 tablespoon of honey
1/4 teaspoon of salt
1 tablespoon of vegetable oil (Romans used olive oil, walnut oil, linseed oil)
3 tablespoons of PASSVM
1 teaspoon of fine flour
pepper caraway

Since I am quite sure Apicius was an extraordinary LIQVAMEN-afficionado, we don't really need LIQVAMEN.

Wash, peel and core the pears and cook them in some water for 15 mins. Drain them carefully and mash them. Beat the eggs.
Grind pepper and caraway and mix them with honey, salt, oil and the beaten eggs.
Solve the flour in PASSVM and add it to the bake dough. Add the mashed pears, mix carefully and fill into a greased ovendish.
Bake for 25 mins. at about 175°C. Serve immediately!
